Tom’s Waterhole Wines at Canowindra recently opened a new winery cafe and wood fired pizzeria - facilities which have been in development for several years.
Owners Graham and Jan Kerr are clearly proud of what they have achieved.
According to Jan, there were times when they didn't think they would make it.
"Three years of battling drought, of falling wine prices, of watching cellar doors around us close, sometimes we were tempted to give it all away,” she said.
“But the Cabonne Council people were wonderful, helping us, encouraging us, and finally it has all come together.”
The new wood fired pizza oven makes pizza, but is also used to smoke beef, make salamis and bake different styles of bread.
The cafe also serves produce that is made right on site.
“We preserve our own olives, smoke our own beef, make our own pickles, bake our own bread. The salamis and even some of the cheeses are made right here," Jan said.
"Unfortunately we can't make everything but we're working on it. Our dream is that one day everything on the plate will be made by us."
The cafe hosts the balloon breakfasts for Graham and Jan's associated business, Balloon Joy Flights.
Graham and Jan say the combination of hot air ballooning, wine making and food is the perfect tourist recipe.
In a time when many rural businesses are doing it tough they have grown by at least 30 per cent each year for the last three years.
It's tough work, of course, but as they are quick to say, they wouldn't do it if it wasn't fun.
