I have found that stir-fries are very popular, easy to do, inexpensive and the whole family enjoys them.
Prawn and noodle stir-fry
* 500g uncooked medium king prawns
* 200g dried rice stick noodles
* 1 clove garlic, crushed
* 2 tablespoons of soy sauce
* 2 tablespoons fish sauce
* 1 teaspoon Somhal Oelek, Indonesian
* 1 cup bean sprouts
* 1/4 cup coriander cut up roughly.
Shell and de-vein prawns leaving tails on. Place noodles in a large heatproof bowl, cover with boiling water and stand until tender then drain.
Heat oil in wok or large frypan add garlic and prawns and stir fry until hot. Stir in bean sprouts and coriander. Simple and sensational.
Beef in black bean sauce and rice noodles
* 250g of dried rice noodles
* 1 tablespoon of peanut oil
* 600g minced ground beef
* 1 medium brown onion sliced thin
* 2 fresh long red chillies, sliced thin.
* 350g of bok choy or napa cabbage chopped coarsely
* 150g of snow peas topped and tailed, n 1/4 cup black bean sauce
* 1/4 cup beef stock
* 1 tablespoon rice vinegar, 4 green
* shallots chopped thin.
Place noodles in a large heatproof bowl, cover with boiling water, stand until tender, drain and stand aside.
Meanwhile heat oil in wok or fry pan over high heat, stir fry beef, brown onion, and chilli until beef is cooked through. Add snow peas and cabbage and cook until tender, add noodles, sauces, stock, vinegar and green onions, stir fry until hot- this is just delicious.
You can get your butcher to do pork if you prefer, it is also noice!
Garlic seafood stir fry
* 1kg uncooked prawns deveined with tails off
* 500g cleaned squid cut into rings,
* 1/4 cup peanut oil
* 1/4 cup of coriander chopped coarsely
* 2 small red chillies chopped finely (seeds out) 1
* /2 tablespoon of coarse black pepper
* 1 tablespoon garlic of 4 cloves garlic crushed
* 170g asparagus spears trimmed
* 175g broccolini chopped coarsely.
* Couple of shallots chopped finely.
Heat oil in wok stir fry seafood in batches until prawns are pink, set aside. Heat more oil in wok, stir fry coriander, chilli, pepper and garlic until fragrant. Add brocolini and asparagus stir fry until veges are tender, return the seafood to the wok with sprouts until hot, Serve up with chopped shallots and coriander. Hope you enjoy these favourites.
