Resort operators on Monday announced lifts would open on June 29, which was on Wednesday pushed back to July 6.
A lack of snowfall has forced the decision.
Vail Resorts has offered refunds to lift, lesson and rental purchases made for the period between June 24 and July 5.
"The delay is to ensure that Falls Creek and Hotham can open enough terrain to provide a safe experience in accordance with the COVID-19 safe operating plan," a statement said.
"Vail Resorts is offering full refunds on all lift, lesson and rental purchases that have been made for Falls Creek and Hotham for the period 24 June to 5 July."
One lift opened at Mount Buller on Wednesday on the resort's main run.
