His parents are currently ongoing quarantining in Howard Springs after rushing to the NT from Melbourne after he went missing.
Mr Ness, 30, has not been seen since he went for a walk alone in Nitmiluk National Park last Tuesday, October 20.
Police have led an extensive search of the area together with Parks and Wildlife staff and NT Emergency Services, undertaking ground searches, fixed and rotary wing searches, drones and water searches, but have not been able to locate Mr Ness.
The search included some 28 people over five days, in hot and dangerous conditions.
"We have had to make this decision to call off the search, however the case remains open," Superintendent Daniel Shean said.
"We are still asking that if anyone knows or has seen anything that may lead us to Mr Ness, to please come forward."
Police said Mr Ness' parents were being provided support services.
Another family member has travelled to Katherine from Queensland and has also been included in family briefings.
"This has been a trying and challenging time for all involved and I'd like to thank everyone for their sensitivity and professionalism," Superintendent Shean said.
Mr Ness came to the Top End for a holiday and quarantined for the required 14 days.
He traveled around the Darwin area and hired a car on Monday and drove alone to Katherine where he stayed the night.
On the Tuesday, he drove to the world famous gorge and arrived there about 1pm on Tuesday.
Despite temperatures hovering about 40 degrees for much of the week, Mr Ness texted a friend to say he was going for a walk.
His hire car was located in the public carpark at the gorge.
He is described as a Caucasian male, thin build, 185-190cm tall, dark brown hair, hazel eyes and was last seen wearing a black top, green/grey pants and red shoes.
Police are appealing to anyone who may have seen Mr Ness or knows of his whereabouts to contact them on 131 444 or CrimeStoppers on 1800 333 000 and quote reference 9458035.
